With it comes endless choices; would you prefer an extravagant banquet with all the family, or a simple, intimate meal? Traditional tastes like abalone and fish maw, or fresh faces like salted egg prawns? What goes best with pineapple tarts?
The classic Yusheng is a regional specialty and the taste of many a childhood Lunar New Year in Singapore and Malaysia, with strips of fresh, raw fish, tangy pickled vegetables and sweet carrot in sticky honey sauce. Mandarin Oriental – Five Yusheng Options for a Chinese New Year in Style
At Cherry Garden, the Mandarin Oriental’s Cantonese restaurant, there are not one, not two, but five variations of yusheng on the menu: highlights include the Prosperity Yusheng, with Arctic clam, home-cured salmon and crispy fish skin; Abundance Yusheng, with cooked lobster meat, hamachi and crispy fish skin; and the vegetarian Garden of Health Yusheng, with fresh fruits and vegetables. They are the centrepieces of five luxurious variations of a Chinese New Year dinner menu, available for dine-in at the restaurant, that feature delicacies such as 4-head South African abalone with shiitake mushroom and dried oyster boulettes, superior saffron broth with conpoy, crab meat and enoki, and double-boiled bird’s nest in superior almond cream with glutinous rice ball.
The Mandarin Cake Shop also offers Chinese New Year-themed pastries and sweets for the occasion, both traditional and modern: the bakery has classic nian gao as well as the extravagant XO Sauce Abalone and Shiitake Mushroom Brioche Feuilletée. Greenwood Fish Market – Specialty Yusheng for Seafood Lovers
For connoisseurs of seafood, here’s a yusheng that’ll get you hooked– the Greenwood Fish Market, suppliers of some of the finest seafood in Singapore, has rolled out a personalisable seafood platter yusheng, available for both dine-in and takeaway. The base Salmon Yusheng serves 4 to 6 and is served with either 200g of salmon sashimi or 500g of lobster atop the usual fixings, but an infinite variety and amount of seafood can be added to the plate from Greenwood’s extensive list of seafood add-ons, including kanpachi, bluefin sashimi, and Hokkaido scallops. The yusheng is finished with crackers and a choice of calamansi plum sauce. For those who’d like to splash out, the Three Treasures Yu Sheng is served with the meat of 200g King Crab Legs, the meat of a whole 500g Boston Lobster, and salmon sashimi.

Ritz-Carlton Millenia – Delectable Yusheng, Pen Cai, and Chinese New Year Dinner Delights
The Ritz-Carlton Millenia’s restaurants are here to share the holiday spirit with Lunar New Year yusheng and dinner delights from award-winning restaurant Colony, eight-time Michelin star awardee Summer Pavilion, and the Republic Bar. Colony’s Lunar New Year menu plates up the traditions of local New Years: traditional Yusheng with salmon and sea whelk, crispy threadfin in sweet and sour sauce, braised pork belly “Dong Po Rou”, and “Buddha jumps over the wall” soup, served in a whole coconut. Chef Cheung’s signature Pen Cai is a celebrative ten-layered affair of sea perch, scallops, fish maw, abalone, and other superior meats and seafoods.
Alongside the special Lunar New Year cocktails at the Republic Bar, sample a Prosperity Kueh Pie Tee Lo Hei– a tropically inspired take on the classic Yusheng with smoked salmon, caviar, cucumber, radish, pomelo and candied pecans, tossed in a honey lime dressing.

Golden Peony – Your Yusheng and Chinese New Year Dinner Sorted
Golden Peony at the Conrad Centennial reimagines traditional Hong Kong Cantonese cuisine for the modern festive season. Headed by Chinese Executive Chef Ku Keung, the restaurant has revealed a series of elegant dishes for your table this Lunar New Year, from yusheng to an array of roast meats, steamed and braised seafood, and sticky sweets.

This Chinese New Year, Holiday Inn’s Cantonese restaurant, Xin Cuisine Chinese Restaurant, and halal-certified buffet restaurant, Atrium Restaurant, present an array of New Year delights for dine-in and takeaway.
From 13 January to 12 February 2025, Atrium Restaurant will host a fully Halal Chinese New Year-themed buffet, featuring festive goodies like Halal yusheng, dim sum, chicken bak kwa, and fried nian gao with sweet potato. The centrepiece of Ya Ge at the Orchid Hotel’s Chinese New Year festive menu is their bright, cheerful Crispy Golden Eel and Yellowtail Yusheng, arranged in the form of a snake to welcome the upcoming year. Available for both dine-in and takeaway, this yusheng is topped with pickled ginger, crispy fried eel skin, fresh yellowtail sashimi, dressed with a house-made passionfruit kumquat sauce, and adorned with gold leaf. A unique– and adorable– touch to this yusheng is the addition of koi-shaped miniature mango puddings, symbolic of transformation and prosperity, for a smooth, tropical twist.

Carlton Hotel Singapore – Cantonese Chinese New Year Dinner and Yusheng
A wide variety of yusheng and festive flavours await diners at Wah Lok, the Carlton Hotel’s Cantonese restaurant, where the restaurant serves up not only its signature Hamachi Soon De Yusheng, a bed of bright greens topped with yellowtail sashimi, but also the Steamed Soon Hock with Tangerine Peel and Double-Boiled Shark’s Fin with Sea Whelk and Chicken. These dishes are part of the whopping eight set menus curated by Wah Lok as dine-in Chinese New Year dinner specials.
Three more varieties of yusheng are available as part of Wah Lok’s takeaway menu: the Abalone Yusheng, Smoked Duck Yusheng, and Alaskan Crab Yusheng. There’s also the holiday crowd-pleaser, “Buddha Jumps Over The Wall” soup: premium seafood like abalone, scallop, fish maw and sea cucumber in flavourful broth.
