A visit to La Bottega Enoteca– if you can get in, the restaurant is almost always fully booked out– promises a cosy, rustic atmosphere and homestyle Italian meal.
There are two types of pizza offered: the Newpolitan, which has dough fermented for 48 hours with a flaky, chewy texture, and the Double Crunch, fermented for 48 hours with a crunchier texture. The Caprese Double Crunch “sandwich” is a refreshing take on the beloved antipasto, with burrata, pesto, Sicilian Datterino tomatoes, and Parmigiano. Do note that there is a waiting time of 40 minutes for the preparation of each Newpolitan pizza, so wait till you’re seated before you begin to work up an appetite. L’antica Pizzeria da Michele – Internationally- Celebrated Pizza, Now in Singapore, and First in the Region
This world-famous pizzeria, established in Naples in 1870, was fully booked for a month when it first landed in Singapore, its first Asia-Pacific location. To put things in perspective, this pizzeria is older than the port of Singapore itself. Its original Naples location has been raved about by Elizabeth Gilbert in her 2006 memoir Eat Pray Love, which gives us very high expectations.
The restaurant’s specialty is its pizza a ruota di carro, translated as “wagon wheel pizza”, a glorious 15-inch pizza in a massive 17 flavours– ranging from the classic four-cheese and bufalina to the more exotic friarielli and salsiccia (bitter leafy greens and sausage, a dish from Campania, paired with fior di latte and Pecorino).

Beyond the Dough – Japanese Fusion Pizza
Beyond the Dough, housed in a tiny but airy 28-seater at Arab Street, is helmed by Eddie Murakami, former head chef at Pizza Strada and master of Japanese fusion food, who now brings Tokyo-Neapolitan pizza to Singapore. Unlike typical wood-fired pizzas, the pizzas at Beyond the Dough are cooked with Japanese wood in a 500-degree oven for between just 50 to 60 seconds, resulting in a beautifully fluffy crust. Made with Japanese flour, Okinawan salt, and olive oil imported from Italy, every pizza is a melting pot of influences.
Start with an assortment of three cold appetisers, served “omakase-style”, or the Home-made Mini Lasagna, a tiny pot of beef, lasagna noodles and tangy tomato sauce topped with melted cheese. Pizzas include the Singapore-exclusive Singapore Rampage, topped with a rich sauce made from a hundred prawns simmered for twenty hours, and the Cacciatore, adapted from an Italian dish of chicken, onion, basil and olives. Beyond the Dough also offers the novel but authentic Italian pizza Bismark, a pizza topped with mushrooms, salsiccia, cheese, and an egg.

Also available are panuozzi, “pizza sandwiches” originating in the region of Naples: the mortazza is filled with savoury Mortadella ham, burrata cheese, and pistachio grains. The pasta is similarly hand-made and tossed in home-made sauce. It seems one can’t leave an Italian restaurant without having had dessert, and the ones at Daniele’s Pizza are worthy of every mention. The panna cotta, made with fragrant vanilla and topped with tart strawberry sauce, was a perfectly creamy note to round out a meal.

Yeast Side – Innovative Pizza Creations
Not just a brunch cafe, Yeast Side serves up sourdough pizzas so you can follow French toast with a Margherita. Originally located only at King Albert Park, the bakery has expanded into various branches all over the island, all the better to catch up with friends everywhere.
The bakery is as experimental with its pizzas as it has been with its bakes: alongside classic prosciutto and arugula, the menu also boasts a beef bolognese pizza, with home-made tomato sauce, minced beef, fennel seed and parmesan, a “Spicy Verde” pizza topped with Béchamel, mozzarella, brie, green harissa, olives and peas, and a “Bestside Breakfast” with bacon, spinach and an onsen egg.
